Mini Vegetable Idlis

Ingredients
- 1 cup idli batter (store-bought or homemade)
- 2 tbsp finely grated carrot
- 2 tbsp finely chopped spinach
- 1 tbsp finely grated beetroot
- 1/2 tsp oil
Instructions

Prepare veggie batter
Mix the grated vegetables into the idli batter. Add a little oil for softness.

Steam idlis
Pour batter into mini idli moulds. Steam for 12-15 minutes until cooked through.

Cool and serve
Let cool slightly before removing from moulds. Serve warm with ghee or mild chutney.
